Brian Lindshield is a professor in the Department of Food, Nutrition, Dietetics and Health at Kansas State University. A native of Kansas, Brian earned an Associate of Science degree at Pratt Community College before moving to Kansas State to major in Nutritional Sciences. On completing his PhD at the University of Illinois, he returned to Kansas where he continues to teach a variety of courses in nutrition.

Prof Lindshield is a firm believer in accessible and affordable education. As a student, he felt exploited by high textbook prices and vowed to teach his Human Nutrition course at Kansas State University without a textbook.
