Management commitment is a very important aspect of an operation’s sanitation and safety team, the more committed and active management are in regards safety and sanitation, the more the rest of the food service staff will respond.
Managers should train employees in sanitary, safe work procedures. They should try and ensure that sanitation and safety practices are incorporated into operating procedures. They should carry out inspections.

Inspections are central to management’s effort to ensure that the sanitation and safety procedures are consistently followed. A full inspection should be carried out once a month at least. After inspections have been completed, inspection forms and checklist should be filled out to give a comprehensive record of the inspection and for comparison with past and future inspection records.
