    Reducing/removing the elements of risk in regards to pests in a food production area is very important. Pests can find their way into foods and provide an unpleasant surprise for a customer and also be carriers of diseases that can cause serious and sometimes deadly illnesses/health issues. Such as hantavirus and leptospirosis, both transmitted by rats. Reducing the attraction and attention of pests and rodents is a very important and effective first step. If you don't provide a buffet for them then they will not really be interested in the area. Which is why keeping the garbage bins away from the food production area is a very important components. Also emptying and sanitizing the trash cans inside the food preparation area everyday is very helpful.

    cross contamination for raw and cooked foods should be laid out so all can understand one should also be aware of peoples allergies as this cross can kill just like a bacteria infection .
