Proper food handling is more a matter of developing a proper attitude than memorizing an extensive list of dos and don'ts. If you and your employees understand the need to be careful with food and know basic sanitation principles, many of the specific rules become a matter of common sense.
The first step in proper food handling is simply making it clear to everyone that sanitation is a priority when purchasing, receiving, storing, preparing, and serving foods.
After completing this module you will:
-Know what the difference is between inspection and grading.
-Know what to expect, and what is irregular when receiving foods from a supplier.
-Be able to store foods at the correct temperature upon delivery.
After completing this module you will:
-Understand the importance of thawing foods in the proper manner.
-Know a number of guidelines to follow when storing foods.
-Be able to prepare food while adhering to guidelines that are significantly important to food sanitation.
-Have knowledge of the different temperatures required by different food types.
