Chemistry - Glycerol

Glycerol

When glycerol reacts with fatty acids, [1] reactions occur at each of the
three hydroxy -OH groups on glycerol. The fat molecules produced, each with
a glycerol molecule and three fatty acid residues, are commonly called
triglycerides.

The formation of the three ester [2] groups characteristic of the
triglyceride is clearly emphasized in the diagram. The condensation nature
of the reaction is emphasised by the equation:

The water split out during the formation of the fat is the key to its
effective digestion.
