Chemistry - Hydroxy groups

Hydroxy groups

The source of the hydroxy groups in the production of most fats and oils
is the triol glycerol. It is called a triol because it has three alcohol
(hydroxy) functional groups as emphasised in the following representations:

Triglycerides are fatty acid esters of glycerol, i.e. they are formed by
reaction between glycerol and fatty acids and contain three ester groups.

Fatty acids are carboxylic acids with long hydrocarbon tails. These acids
may be:

* unsaturated: all carbon-carbon bonds are single bonds

* mono-unsaturated: [1] contain one C=C double bond

* polyunsaturated: [2] contain two or more C=C double bonds
