This again emphasises the condensation reaction between the _carboxy _and
_hydroxy _functional groups leading to the formation of the _ester
Esters are also important, naturally-occurring substances, often
sweet-smelling. Many of the aromas of flowers and fruits are due to esters.
Since esters are relatively easy to produce in a laboratory, esters are
used to make perfumes and artificial flavourings.
