Vernalisation

Unless some seeds, bulbs and plants are exposed to periods of low
temperatures, they will not germinate, develop and flower. Many root
vegetables (carrots, turnips) and winter varieties of wheat will not flower
in their first season. Bulbs need several weeks of cold conditions before
they start to grow and flower. Some gardeners put their bulbs in the fridge
before planting!
